March always feels like we’re just on the precipice of spring. It’s the promise of warmer weather, flowers blooming, and more time spent outdoors. While we can’t control or predict the actual temperature, we can usher in the new season with some lighter (yet still flavor-packed) recipes as we move away from the heartier stews and stick-to-your-ribs comfort foods we’ve enjoyed during the holiday season.

For our editors here at The Kitchn, some clear themes emerged in regards to what we’re planning to cook in March. Fresh dill takes center stage in this creamy salmon recipe and this one-pot lemon and chicken meatball orzo dish. Anything lemon is also welcomed with open arms — especially lemon raspberry muffins and lemon Parmesan chicken tenders. Plus, we’ve got a host of different salads — some with creamy avocado dressings, and others that are lighter and emphasize crunch.

Whether you’re making an easy weeknight dinner or family brunch, or you’re hosting a gathering for St. Patrick’s Day, here are 27 meals you’ll totally want to make this March.

Gỏi Gà (Vietnamese Shredded Chicken and Cabbage Salad)

Our Senior Lifestyle Editor Quinn loves making this Vietnamese slaw chicken salad "to feel a little bit closer to spring (and summer!). It's easy to make, lasts basically forever in the fridge so it's perfect for packed lunches, and it truly only gets better as it marinates. Warmth, I can almost feel you!" she says.

Kale Crunch Salad

Inspired by the popular version from Chick-fil-A, this salad has a little extra “crunch," thanks to a savory, nutty mix of almonds, panko breadcrumbs, garlic, and sunflower seeds. It's light yet satisfying, and a great way to usher in spring.
